Baking for Distraction with Apple Raisin Bread Pudding

It has been quite a while since my last post..sorry for the delay in updating this blog..well, there have been a lot of exciting and not so exciting things going on..Since July, i started a new journey as an entrepreneur...i am involve in business using social media or online networking..
I still able to find time to bake as baking is one of my passion..I try to find time to bake for family and friends..

So, last week to distract my mind from over-thinking about my mother's who is warded in the hospital, i baked bread pudding. 
I remembered that i have promised my daughter a long time ago to bake her bread pudding..



The Recipe of My Style Apple Raisin Bread Pudding
With Vanilla Sauce
Ingredients:
2 cups whole milk
1/4 cup (57g) butter
1/3 cup (67g) brown sugar
3 eggs
2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla essence
3 cups bread (torn into small pieces)
1/2 cup apple slices (peeled & dice into small pieces)
1/2 cup raisin

Methods:
1. Heat milk in slow fire
2. Combine butter into milk until melted
3. Cold the milk-butter mixture until lukewarm
4. Combine sugar, eggs, cinnamon, nutmeg & vanilla essence in a bowl and beat with electric mixer at medium speed for 2 minutes
5. Slowly add milk-butter mixture
6. Place bread in lightly greased casserole
7. Sprinkle with half of the raisin and apple
8. Pour/ladle batter on top of bread
9. Sprinkle with balance of raisin & apple on top of bread
10. Bake using hot water bath in oven at 160 degree C for 45-50 minutes

Vanilla Sauce
Ingredients:
1/3 (67g) brown sugar
1 tablespoon flour
1 pinch ground cinnamon
1 egg
2 tablespoon butter (melted)
1 1/4 cup milk
1 pinch salt
1 tablespoon vanilla essence

Methods:
1. Whisk together all ingredients until smooth over medium heat
2. Constant whisking over medium heat for 4-5 minutes until thick





My effort was rewarded when my daughter said 
"it is delicious mama"

Baked Frittata Frenzy


Baked Potato Chicken Frittata with Cherry Tomatoes
Frittata is an Italian dish. According to Merriam-Webster Online Dictionary, frittata is an unfolded omelette often containing chopped vegetables and/or meats. It can be enriched with cheese and pasta and may also be flavored with herbs.

It is one of my daughter's favorite dishes...

So for the Materials & Methods of my style frittata..

Materials
Celery 
Carrot - chopped into cubes 
Potato - chopped into cubes
1 pc of chicken breast - diced and marinate with salt and pepper
1 shallot - diced
1/2 cup fresh milk
Parmesan cheese - grated
1/2 table spoon Olive oil 
4 eggs
Cherry tomatoes

Methods
1. Preheat oven to 150degreeC
2. Whisk eggs with half of grated parmesan and keep aside.
3. Line baking tray (I used pie baking tray) with Olive oil
4. Heat frying pan with olive oil, put in diced shallot & fry for few seconds. Add chicken meat and fry for few second.
5. Add potato and stir briefly until the tender. Add carrot and finally add celery.
6. Add fresh milk & stir briefly until well mix
7. Place the cooked ingredients into greased baking tray
8. Pour over the egg mixture into the baking tray & scatter with grated parmesan.
9. Place into heated oven 
10. When half cooked, place cherry tomatoes and little of grated parmesan
11. Bake until golden and puffy until the centre feels firm & springy (about 10 - 15 mins)

This is one dish that i will keep baking...easy peasy...enjoy...

Non-cake-based cooking @ a.k.a. mama simple recipes when she is lazy

 Simple Egg Mee Soup
Simply cooked the ready made egg mee in chicken soup. Garnish with parsley and tomatoes...dinner is served.. 

 Steamed 'Siakap' Fish 
Simply steam the fish for 20 minutes, garnish with lots of tomato, parsley & boiled carrots...and then bismillah..

 Chicken Potato Fritata 
 An even simpler recipe for working mom..only take 30 minutes to prepare then leave it in the oven..

Herbs Chicken hot pot
Another simple recipe..marinated chicken in a pot with round slices potato on top..infused with rosemary and thyme herbs..

Bowtie pasta with Alfredo sauce
Simply boiled bowtie pasta till al dente..prepare Alfredo sauce, mixed pasta with sauce...ta-da, ready to be served..

Melty Hershey to melt your heart..

My Style Melty Hershey

My first attempt for the much talked about Melty Hershey..
Thanks to all other pro bakers & bloggers for sharing their recipe. My heartfelt thanks to Dr Hajar Ayub for introducing me to the blog and blogger who have been actively uploading and sharing their recipes.

I personally think Melty Hershey is a very dynamic recipe..You basically can throw in anything you  like and desire (in my case anything in the fridge and kitchen) into a box/cup/container, keep in fridge for a couple of hours and ta-da...it is ready to be served..

In this 1st experiment I used a combination of mixture non-diary whipping cream and cream cheese, mixture of choc ganache and non-diary whipping cream, fresh mango, mango filling, choc ganache and lots of pomegranate arils. 

In the nutshell, my style Melty Hershey is the mixture of layers as per below:

1. Base layer : Crushed Oreo biscuits + almond nibs + melted butter 

2. 2nd layer from bottom : mixture of non-diary whipping cream with cream cheese

3. 3rd layer from bottom : fresh mango pieces (squeezed half of lemon to the mango pieces before layering).

4. 4th layer from bottom : combination of mixture chocolate ganache with non-diary whipping cream and mixture of non-diary whipping cream with cream cheese - alternate mixture when layering.

5. 5th layer from bottom : ready-made mango filling

6. 6th layer @ top most layer : mixture of non-diary whipping cream with cream cheese. Decorate with Hershey chocolate syrup and lots of pomegranate arils. Keep in fridge for at least 2 hours before serving.


Few spoonfuls of my style Melty Hershey have melted my hubby & daughter hearts...Alhamdulillah, they liked it..

The 2nd serving in a smaller dessert bowl...

Muffins Mania...

The muffins project 
Three types of muffins were baked on last saturday for a friend of mine. For someone like me that is not even an amateur baker (i called myself a beginner baker), baking 3 types of muffins with a total of 60 pcs of muffins can be overwhelming...
but i am satisfied and happy with the outcomes..

The muffins were :
1. Banana Macadamia Muffins 
2. Blueberry Muffins
3. Chocolate Chips Muffins


 Banana Macadamia Muffins 
The recipe for Banan Macadamia Muffins was adapted from Brown Eye Baker 

Blueberry Muffins
This moist blueberry muffins recipe was adapted with some modifications 
from joy of baking website.

 Chocolate chips Muffins
These moist and fluffy muffins were the outcome from the recipe adapted with minor modifications from allrecipes.com

The 2nd box is for my friend (Dr Hilwati) sort of  'office warming party' on 7th June 2013.
I am so looking forward to visit her new office..
